Taco Mac & Cheese

Who doesn't love macaroni and cheese? Today I'm going to share a variation of classic macaroni and cheese that I've been loving lately: Taco Mac & Cheese! It's super simple with just a few extra ingredients.

Taco Mac & Cheese


  • 1 Box of Macaroni & Cheese
  • 1 Can of Corn
  • 1/2 Can of Black Beans
  • 1 Tomato (diced)
  • 1/2 cup of Chopped Red Onion
  • Taco Seasoning
  • Optional: Veggie Crumbles/Hamburger

Prep Time About 20 minutes
Makes About 6-8 servings


  1. Boil the water for you Mac & Cheese while dicing the Tomato and Onion. I chopped 1/2 a cup of onions and about all of the tomato.
  2. When the water is boiling, add in your noodles and begin cooking your corn and black beans.
  3. Drain corn, black beans, and macaroni noodles. Combine all 3 plus cheese, milk, butter, onions, and tomatoes. Add as much taco seasoning as your heart desires.
  4. Veggie Crumbles cook quickly enough that I just cook them after I've added in everything else. If you're making hamburger - you're on your own!
  5. Dish up and enjoy your taco mac & cheese!

This taco mac & cheese recipe is so easy to adapt to your own liking. Add in more onions or beans, dice the tomato up smaller, or even add in some bell peppers if you'd like.
